We made a side trip from Dijon to Beaune, a major service centre for the wine industry, but also packed with history. It is, still, a walled city so has a very compact and interesting centre.
Nicolas Rolin who was living in the 14th century founded a hospital for the poor in Beaune which remarkably was still operating as a hospital until the late 1990's. For Nicolas Rolin's time think of the 100 years war between France & England, and Burgundy as a separate state from France.
Today it is an incredibly well preserved building, including the spectacular coloured roof tiles typical of the area, and functions as a museum describing its 600+ years as a hospital. Mind blowing quantities of history!
